- 1 lb ground beef
- 1/2 cup bread crumbs
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 1/4 cup chopped tomato
- 1 tbsp taco seasoning
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded cheddar cheese
- 1/4 cup salsa
- 1/4 cup crushed tortilla chips
- 1/4 cup chopped fresh cilantro
Instructions

Preheat the oven to 375°F (190°C).

In a large bowl, mix together ground beef, bread crumbs, onion, bell pepper, tomato, taco seasoning, garlic powder, cumin, salt, and black pepper until well combined.

Transfer the mixture to a greased loaf pan and press it down firmly.

Bake in the preheated oven for 30 minutes.

In a small bowl, mix together shredded cheddar cheese, salsa, crushed tortilla chips, and chopped cilantro.

Remove the meatloaf from the oven and spread the cheese mixture evenly over the top.
