How To Make Chef Paul Prudhomme’s Cajun Meatloaf Recipe
A savory and spicy meatloaf seasoned with Cajun spices and topped with a tangy tomato sauce.

Ingredients
- 1 lb ground beef
- 1 lb ground pork
- 1 onion, finely chopped
- 1 green bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 2 eggs
- 2 tbsp Worcestershire sauce
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 1 cup tomato sauce
- Salt and pepper to taste
Instructions

Preheat oven to 350°F (175°C).

In a large mixing bowl, combine ground beef, ground pork, onion, green bell pepper, garlic, breadcrumbs, eggs, Worcestershire sauce, cayenne pepper, paprika, garlic powder, salt, and pepper.

Mix well, but do not overwork the meat.

Transfer mixture to a greased 9×5 inch loaf pan, and press it down firmly.

Spread tomato sauce over the top of the meatloaf.

Bake for 1 hour or until internal temperature reaches at least 160°F (70°C).

Let rest for 5 minutes before slicing and serving.
