Ingredients

  • 1 whole rabbit, cut into pieces
  • 2 cups of vegetable oil
  • 1 cup of all-purpose flour
  • 1 tbsp of paprika
  • 1 tsp of salt
  • 1/2 tsp of black pepper
  • 1/2 tsp of garlic powder
  • 1/2 tsp of dried thyme
  • 1/2 tsp of dried oregano
  • 1/2 cup of mayonnaise
  • 1/4 cup of chopped fresh herbs (such as parsley, chives, and dill)
  • 1 tbsp of lemon juice
  • Salt and pepper, to taste

Instructions

  1. In a large skillet, heat the vegetable oil over medium-high heat.

  2. In a shallow dish, combine the flour, paprika, salt, black pepper, garlic powder, dried thyme, and dried oregano.

  3. Dip each rabbit piece into the flour mixture, coating it evenly.

  4. Place the coated rabbit pieces in the hot oil and fry until golden brown and crispy, about 4-5 minutes per side. Remove and drain on a paper towel-lined plate.

  5. In a small bowl, mix together the mayonnaise, chopped fresh herbs, lemon juice, salt, and pepper to make the herb mayonnaise.

  6. Serve the crisp-fried rabbit with the herb mayonnaise on the side.
