Ingredients

  • 12 oz (340g) linguine
  • 1 lb (450g) prawns, peeled and deveined
  • 3 cloves garlic, minced
  • Zest of 1 lemon
  • 1/4 cup (30g) fresh parsley, finely chopped
  • 2 tbsp (30ml) olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the linguine according to package instructions. Drain and set aside.

  2. In a large pan, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

  3. Add the prawns to the pan and cook until pink and cooked through, about 3-4 minutes per side.

  4. In a small bowl, combine the lemon zest and chopped parsley to make the gremolata.

  5. Add the cooked linguine to the pan with the prawns. Toss well to coat the pasta with the garlic-infused oil.

  6. Season with salt and pepper to taste. Sprinkle the gremolata over the pasta and prawns, and toss again to combine.

  7. Serve the Gremolata Prawn Pasta with a sprinkle of grated Parmesan cheese on top.
