How To Make Chicken and Sweet Potato Rice
This sweet potato rice is an Asian-inspired, filling dish that’s loaded with deliciously tender sushi rice, sweet potatoes, and protein-filled chicken!

Ingredients
- 1cupJapanese sushi style rice
- 1cupwater
- ¼lbground chicken
- ¾tspsalt,divided
- ¼tspground black pepper
- 1sweet potato,cubed
- ¼tspground black pepper
Instructions

Put the rice in a large bowl and cover with water. Swirl the water to rinse the rice, pour into a wire mesh strainer to drain; repeat.

Soak the clean rice in 1 cup of fresh water for 30 minutes.

Mix chicken, ¼ teaspoon salt, and pepper in a bowl, then let stand for 10 minutes.

Combine the rice and soaking water, chicken, sweet potato, and ¼ teaspoon of salt in a microwave pressure cooker.

Cover the cooker, then cook in microwave at 600W for 10 minutes. Remove the cooker from the microwave, then let stand for 15 minutes.

Release the pressure according cooker manufacturer’s instructions. Mix well.
