Ingredients

  • 2 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 cup diced carrots
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon curry powder
  • 1 tablespoon vegetable oil
  • 1/4 cup cashews (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium heat.

  2. Add the garlic and onion, and sauté until fragrant and onion turns translucent.

  3. Add the carrots and bell peppers, and cook for another 2-3 minutes until vegetables are slightly tender.

  4. Push the vegetables to one side of the skillet and add the cooked rice to the other side.

  5. Drizzle the soy sauce and sprinkle the curry powder over the rice.

  6. Stir everything together until well combined.

  7. Add the pineapple chunks and cashews (if using), and continue to cook for another 2-3 minutes.

  8. Season with salt and pepper to taste.

  9. Remove from heat and garnish with fresh cilantro.

  10. Serve hot and enjoy!
