Ingredients
- 2 medium sweet potatoes, peeled and cubed
- 1 cup frozen peas
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 inch ginger, grated
- 1 tbsp curry powder
- 1 tsp cumin powder
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 can (400ml) coconut milk
- 1 cup vegetable broth
- 2 tbsp oil
- Salt to taste
- Fresh cilantro, for garnish
Instructions

Heat oil in a large pan over medium heat. Add onions and sauté until translucent.

Add garlic and ginger to the pan and cook for another minute.

Add the curry powder, cumin powder, turmeric powder, and coriander powder. Stir well to combine.

Add the sweet potatoes and peas to the pan, and season with salt. Cook for 5 minutes, stirring occasionally.

Pour in the coconut milk and vegetable broth. Bring to a simmer and let it cook for 20 minutes, or until the sweet potatoes are tender.

Serve the sweet potato and pea curry over cooked rice or with naan bread. Garnish with fresh cilantro.
