How To Make Tomato & Mascarpone Pasta Bake

Ingredients
- 8 oz penne pasta
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 can (14 oz) diced tomatoes
- 1/2 cup mascarpone cheese
- 1/2 cup grated Parmesan cheese
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- Salt and pepper, to taste
- Fresh basil, for garnish
Instructions

Preheat the oven to 375°F (190°C). Cook the penne pasta according to package instructions, then set aside.

In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.

Add the diced tomatoes, mascarpone cheese, Parmesan cheese, dried basil, dried oregano, salt, and pepper to the skillet. Stir well to combine and simmer for 5 minutes.

Add the cooked penne pasta to the skillet and stir until the pasta is coated in the sauce.

Transfer the pasta mixture to a baking dish and spread it out evenly. Sprinkle some additional Parmesan cheese on top.

Bake in the preheated oven for 20-25 minutes, until the top is golden and bubbly.

Garnish with fresh basil before serving.
