Ingredients

  • 1 lb beef, diced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup chicken broth
  • 2 tbsp taco seasoning
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced avocado

Instructions

  1. In a large pot, heat some oil over medium heat. Add beef and cook until browned. Remove from pot and set aside.

  2. In the same pot, add onion, garlic, and bell pepper. Cook until softened.

  3. Add diced tomatoes, black beans, corn, chicken broth, taco seasoning, cumin, paprika, and cooked beef. Stir well to combine.

  4. Bring to a boil, then reduce heat to low. Cover and simmer for 1 hour, stirring occasionally.

  5. Season with salt and pepper to taste.

  6. Serve hot with optional toppings. Enjoy!
