Ingredients
- 1 tbsp olive oil
- 1 lb kielbasa, sliced
- 1 onion, thinly sliced
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 2 cups red potatoes, diced
- 1 tsp paprika
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- Salt and pepper, to taste
Instructions

Heat olive oil in a large skillet over medium heat.

Add kielbasa and cook until browned, about 5 minutes.

Remove kielbasa from skillet and set aside.

In the same skillet, add onion, bell pepper, and garlic. Cook until vegetables are tender, about 5 minutes.

Add diced potatoes, paprika, thyme, oregano, salt, and pepper. Stir well to coat the potatoes with the seasonings.

Cover and cook for 10-15 minutes, or until the potatoes are fork-tender.

Return the cooked kielbasa to the skillet and heat through.
