Ingredients

  • 1 tbsp olive oil
  • 1 lb kielbasa, sliced
  • 1 onion, thinly sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 2 cups red potatoes, diced
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add kielbasa and cook until browned, about 5 minutes.

  3. Remove kielbasa from skillet and set aside.

  4. In the same skillet, add onion, bell pepper, and garlic. Cook until vegetables are tender, about 5 minutes.

  5. Add diced potatoes, paprika, thyme, oregano, salt, and pepper. Stir well to coat the potatoes with the seasonings.

  6. Cover and cook for 10-15 minutes, or until the potatoes are fork-tender.

  7. Return the cooked kielbasa to the skillet and heat through.

  8. Serve hot and enjoy!
