Ingredients

  • 2 cups of shredded chicken breast
  • 1 packet of taco seasoning
  • 1 cup of diced tomatoes
  • 1 cup of corn kernels
  • 1 cup of black beans, rinsed and drained
  • 1 cup of shredded cheddar cheese
  • 8 small corn tortillas
  • 1/4 cup of chopped fresh cilantro
  • 1/2 cup of sour cream, for serving
  • 1/2 cup of guacamole, for serving

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the shredded chicken, taco seasoning, diced tomatoes, corn kernels, and black beans.

  3. Grease a 9×13-inch casserole dish and spread half of the chicken mixture evenly on the bottom.

  4. Layer half of the corn tortillas on top of the chicken mixture.

  5. Sprinkle half of the shredded cheese over the tortillas.

  6. Repeat the layers with the remaining chicken mixture, tortillas, and cheese.

  7. Cover the casserole dish with foil and bake for 20 minutes.

  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

  9. Remove from the oven and let it cool for a few minutes.

  10. Garnish with chopped cilantro and serve with sour cream and guacamole.
