How To Make Taco Tuesday Casserole

There’s nothing better than a hot and fresh casserole right from the oven. For cooking recipes that are failsafe and delicious, look no further and follow these casserole recipes that are sure to garner you some new fans along the way.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 package taco seasoning
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup shredded cheese
  • 4 cups tortilla chips, crushed
  • Optional toppings: sour cream, chopped tomatoes, chopped lettuce

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.

  3. Add the diced onion, bell pepper, and minced garlic to the skillet. Cook until the vegetables are soft.

  4. Stir in the taco seasoning, diced tomatoes, black beans, and frozen corn. Cook for an additional 5 minutes.

  5. In a greased casserole dish, layer half of the crushed tortilla chips. Top with half of the beef mixture and half of the shredded cheese.

  6. Repeat the layers, ending with a layer of cheese on top.

  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.

  8. Serve hot with optional toppings of sour cream, chopped tomatoes, and chopped lettuce.
