Appetizing Chicken Piccata Recipe

A tasty lemon-y take on the Italian inspired dish.

A fancy name but it definitely is a simple dish, and a tasty one at that! It's wonderfully tender and juicy chicken meat dredged first before browning on a skillet then finished off in the oven. It's served with lemon and butter.

Ingredients

  • 3 boneless skinless chicken breasts, pounded flat
  • 1 tsp garlic
  • 1 lemon, sliced
  • olive oil, for sauteing
  • ½ cup flour, enough to coat chicken
  • salt and pepper

Instructions

  1. Preheat oven to 350 degrees F.

  2. Pound chicken breasts until thin and flat.
  3. Saute 1 tsp. garlic in pan with olive oil.
  4. In a wide bowl, prepare mixture of flour, salt and pepper, and additional seasonings to coat chicken.
  5. Place each chicken breasts in flour mixture, coating both sides, and then drop into pan of olive oil and garlic.
  6. Brown each chicken breast on both sides.
  7. Once browned, place chicken breasts into casserole dish.
  8. Pour remaining oil/garlic over top and then top chicken breasts with sliced lemon.
  9. Bake at 350 degrees F for 35 minutes and serve.
