Serves:
Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1/2 cup all-purpose flour
- 2 tbsp olive oil
- 1/4 cup unsalted butter
- 3 cloves garlic, minced
- 1 cup chicken broth
- Juice of 2 lemons
- 1/4 cup capers, drained
- 1/4 cup chopped fresh parsley
Instructions
-
Season the chicken breasts with salt and pepper, then dredge them in flour, shaking off any excess.
-
In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until browned, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
-
Reduce the heat to medium and add the butter to the same skillet. Once melted, add the minced garlic and cook for 1 minute, stirring constantly.
-
Pour in the chicken broth and lemon juice, stirring to combine. Bring the mixture to a simmer and cook for 5 minutes, until slightly reduced.
-
Stir in the capers and parsley, then return the chicken breasts to the skillet. Cook for an additional 3-4 minutes, until the chicken is cooked through and the sauce has thickened.
-
Serve the chicken piccata hot, spooning the sauce over each chicken breast. Garnish with additional chopped parsley, if desired.
