Serves:
Ingredients
- 4 turkey cutlets
- 1/4 cup all-purpose flour
- 2 tbsp olive oil
- 1/4 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tbsp capers
- 2 tbsp unsalted butter
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
-
Season the turkey cutlets with salt and pepper. Dredge them in flour, shaking off any excess.
-
Heat olive oil in a large skillet over medium heat. Cook the turkey cutlets for about 3-4 minutes per side, until golden brown. Remove from the skillet and set aside.
-
In the same skillet, add chicken broth, lemon juice, and capers. Bring to a simmer and cook for 2 minutes, scraping up any browned bits from the bottom of the skillet.
-
Stir in the butter until melted and well combined. Return the turkey cutlets to the skillet and cook for an additional 2-3 minutes, until heated through and coated with the sauce.
-
Serve the turkey piccata over cooked pasta or rice, spooning the sauce over the cutlets. Garnish with chopped fresh parsley.
