Preparation: 15 minutes
Cooking: 20 minutes
Total: 35 minutes

Serves:

Ingredients

  • 4 turkey cutlets
  • 1/4 cup all-purpose flour
  • 2 tbsp olive oil
  • 1/4 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tbsp capers
  • 2 tbsp unsalted butter
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Season the turkey cutlets with salt and pepper. Dredge them in flour, shaking off any excess.

  2. Heat olive oil in a large skillet over medium heat. Cook the turkey cutlets for about 3-4 minutes per side, until golden brown. Remove from the skillet and set aside.

  3. In the same skillet, add chicken broth, lemon juice, and capers. Bring to a simmer and cook for 2 minutes, scraping up any browned bits from the bottom of the skillet.

  4. Stir in the butter until melted and well combined. Return the turkey cutlets to the skillet and cook for an additional 2-3 minutes, until heated through and coated with the sauce.

  5. Serve the turkey piccata over cooked pasta or rice, spooning the sauce over the cutlets. Garnish with chopped fresh parsley.
