Ingredients

  • 1 lb bacon, sliced, diced
  • 1 sweet onion, medium, chopped
  • 6 eggs, large, lightly beaten
  • 4 cup frozen hash brown potatoes, shredded, thawed
  • 2 cup cheddar cheese, shredded
  • cup 4% cottage cheese
  • cup Swiss cheese, shredded

Instructions

  1. Preheat oven to 350 degrees F. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain.

  2. In a large bowl, combine remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9-inch baking dish.

  3. Bake, uncovered, until a knife inserted in the center comes out clean. This will take 35 to 40 minutes. Let stand 10 minutes before cutting.
