How To Make Amish Breakfast Casserole

Ingredients
- 1 lb bacon, sliced, diced
- 1 sweet onion, medium, chopped
- 6 eggs, large, lightly beaten
- 4 cup frozen hash brown potatoes, shredded, thawed
- 2 cup cheddar cheese, shredded
- 1½ cup 4% cottage cheese
- 1¼ cup Swiss cheese, shredded
Instructions

Preheat oven to 350 degrees F. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain.

In a large bowl, combine remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9-inch baking dish.

Bake, uncovered, until a knife inserted in the center comes out clean. This will take 35 to 40 minutes. Let stand 10 minutes before cutting.
