How To Make Spiced Lamb Pilaf

Ingredients
- 1 lb lamb, cut into bite-sized pieces
- 2 cups basmati rice
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- 4 cups chicken or vegetable broth
- 3 tbsp olive oil
- Salt, to taste
- Fresh cilantro, for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and cook until softened.

Add the lamb pieces to the pot and cook until browned on all sides.

Stir in the ground cumin, ground coriander, ground turmeric, ground cinnamon, and cayenne pepper. Cook for another minute to release the flavors.

Add the basmati rice to the pot and stir to coat it in the spices.

Pour in the chicken or vegetable broth and season with salt to taste. Bring to a boil, then reduce heat to low and cover the pot with a tight-fitting lid. Let simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

Remove from heat and let the pilaf sit, covered, for 5-10 minutes to allow the flavors to meld together.

Fluff the pilaf with a fork and transfer to a serving dish. Garnish with fresh cilantro before serving.
