How To Make Lebanese-style Ground Lamb and Lentil Soup

This hearty soup is filled with flavorful spices, tender ground lamb, and protein-rich lentils.

Serves:

Ingredients

  • 1 lb. ground lamb
  • 1 cup green lentils, rinsed and drained
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp. tomato paste
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1/4 tsp. ground cinnamon
  • 4 cups chicken or vegetable broth
  • Salt and pepper, to taste
  • Optional toppings: chopped fresh parsley, lemon wedges

Instructions

  1. In a large pot or Dutch oven, cook the ground lamb over medium-high heat until browned.

  2. Add the onion and garlic and sauté until softened.

  3. Stir in the tomato paste, cumin, coriander, and cinnamon and cook for 1-2 minutes until fragrant.

  4. Pour in the broth and add the lentils. Bring the soup to a boil, then reduce the heat to low and simmer for 30-35 minutes until the lentils are tender.

  5. Season with salt and pepper to taste.

  6. Serve hot with optional toppings, if desired.
