How To Make Persian Ground Lamb Kabob Recipe

A spiced ground lamb kabob that is perfect for grilling and serving with fresh herbs and rice.

Ingredients

  • 1 lb. ground lamb
  • 1 small onion, grated
  • 2 cloves garlic, minced
  • 1 tbsp. fresh lemon juice
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1 tsp. paprika
  • 1/2 tsp. cinnamon
  • Salt and pepper to taste
  • Skewers, non-metallic, soaked in water

Instructions

  1. In a large bowl, combine ground lamb, grated onion, minced garlic, lemon juice, cumin, coriander, paprika, cinnamon, salt, and pepper. Mix well.

  2. Divide the lamb mixture into 8 portions and shape each portion into a long sausage-like shape around a skewer.

  3. Preheat grill to medium-high and oil grates.

  4. Grill lamb kabobs for 5-6 minutes, flipping occasionally until a little charred on each side and cooked through. Move kabobs to the cooler part of the grill and let them cook for another 5-6 minutes.

  5. Remove kabobs from grill and let rest for about 5 minutes before serving with fresh herbs and rice.
