Ingredients

  • 1 lb. ground lamb
  • 1 cup couscous
  • 1 can chickpeas, drained and rinsed
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp. olive oil
  • 1 tsp. ground cumin
  • 1 tsp. dried oregano
  • 1/2 tsp. smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the ground lamb and cook until browned, breaking it up as it cooks, about 8-10 minutes.

  2. Add the onion, garlic, red bell pepper, cumin, oregano, paprika, salt, and pepper. Cook until the vegetables are tender, about 5-7 minutes.

  3. Meanwhile, in a separate pot, cook the couscous according to package directions.

  4. Add the chickpeas to the skillet and cook until heated through, about 2-3 minutes.

  5. Serve the lamb mixture over the couscous and garnish with fresh parsley.
