Preparation: 20 minutes
Cooking: 25 minutes
Total: 45 minutes

Serves:

Ingredients

  • 1 pound ground lamb
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • Salt and pepper to taste
  • 4 flatbreads or naan
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped red onion
  • 1/2 cup plain Greek yogurt
  • 1 garlic clove, minced
  • Juice of 1/2 lemon

Instructions

  1. Preheat oven to 400°F.

  2. In a large skillet, heat olive oil over medium heat. Add ground lamb and cook until browned and cooked through, breaking up the meat as it cooks.

  3. Stir in oregano, cumin, coriander, and salt and pepper to taste.

  4. Place the flatbreads or naan on a baking sheet. Top with the spiced lamb, chopped tomatoes, parsley, mint, and red onion.

  5. Bake in the oven for 10-12 minutes, until the bread is crispy and the lamb is heated through.

  6. Meanwhile, in a small bowl, stir together the Greek yogurt, minced garlic, and lemon juice.

  7. Serve the flatbreads hot, topped with the yogurt sauce.
