Ingredients

  • 4 whole wheat pitas
  • 1 lb ground lamb
  • 1/2 red onion, chopped
  • 2 garlic cloves, minced
  • 1 tomato, diced
  • 1 tbsp tomato paste
  • 2 tsp dried oregano
  • Salt and pepper, to taste
  • 1/2 cup crumbled feta cheese
  • Fresh parsley, chopped
  • Lemon wedges (optional)

Instructions

  1. Preheat oven to 400°F.

  2. In a large skillet, brown the ground lamb over medium-high heat. Drain any excess fat.

  3. Add the chopped onion and garlic to the skillet and sauté until softened, about 5 minutes.

  4. Stir in the diced tomato, tomato paste, oregano, salt, and pepper. Cook for an additional 5 minutes, until the tomato has broken down and the mixture has thickened.

  5. Place the pitas on a baking sheet lined with parchment paper. Spoon the lamb mixture evenly over each pita, leaving a small border around the edges.

  6. Top the lamb mixture with the crumbled feta cheese.

  7. Bake for 8-10 minutes, until the pita is crispy and the cheese is melted.

  8. Serve hot, garnished with chopped parsley and lemon wedges, if desired.
