How To Make Baked Courgettes Stuffed with Spiced Lamb & Tomato Sauce

- 4 courgettes
- 500g ground lamb
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp dried oregano
- 1 cup tomato sauce
- Salt and pepper, to taste
- Olive oil, for drizzling
Instructions

Preheat the oven to 200°C (400°F).

Cut the courgettes in half lengthwise and scoop out the seeds to create a hollow.

In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté until translucent.

Add the ground lamb and cook until browned. Stir in the cumin, paprika, dried oregano, salt, and pepper.

Pour in the tomato sauce and let it simmer for a few minutes.

Fill the courgettes with the spiced lamb mixture and place them in a baking dish. Drizzle with olive oil.

Bake for about 20-25 minutes until the courgettes are tender and the filling is cooked through.
