How To Make Parmesan Pork with Tomato & Olive Spaghetti

Ingredients

  • 4 pork chops
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh basil
  • Salt and pepper to taste
  • 1 lb spaghetti

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a shallow bowl, mix together the Parmesan cheese and breadcrumbs. Season the pork chops with salt and pepper.

  3. Dip each pork chop into the Parmesan mixture, pressing it firmly to coat both sides.

  4. Heat the olive oil in a large oven-safe skillet over medium heat. Cook the pork chops for 3-4 minutes on each side until golden brown.

  5. Transfer the skillet to the oven and bake for 12-15 minutes, or until the pork is cooked through.

  6. In a separate pot, cook the spaghetti according to package instructions.

  7. In a saucepan, heat olive oil over medium heat and sauté garlic until fragrant. Add the diced tomatoes, black olives, and chopped basil. Season with salt and pepper. Simmer for 5 minutes.

  8. Drain the cooked spaghetti and toss with the tomato and olive mixture.

  9. Serve the Parmesan pork chops over a bed of tomato and olive spaghetti.
