How To Make Courgettes stuffed with goat’s cheese & lamb ragout

Ingredients
- 4 medium courgettes
- 200g goat’s cheese
- 500g lamb mince
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 can of chopped tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- Olive oil, for cooking
Instructions

Preheat the oven to 180°C (350°F).

Slice the courgettes in half lengthwise and scoop out the seeds with a spoon, creating a hollow.

In a bowl, mix the goat’s cheese with salt and pepper. Spoon the cheese into the hollows of the courgettes.

In a large pan, heat some olive oil over medium heat and add the onion and garlic. Cook until softened.

Add the lamb mince to the pan and cook until browned.

Stir in the chopped tomatoes, dried oregano, dried basil, salt, and pepper. Let simmer for 10 minutes.

Place the stuffed courgettes in a baking dish and spoon the lamb ragout over the top.

Cover the dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes, until the courgettes are tender and the cheese is melted and golden.

Serve the courgettes stuffed with goat’s cheese and lamb ragout hot.
