Ingredients

  • 4 boneless chicken breasts
  • 2 tablespoons Joloff spice blend
  • 1/2 cup cooked rice
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • For the hot peanut & tomato sauce:
  • 1/2 cup peanut butter
  • 1 cup diced tomatoes
  • 1/2 cup chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon hot sauce
  • Salt to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.

  2. In a bowl, combine cooked rice, onion, bell pepper, garlic, parsley, Joloff spice blend, salt, and pepper.

  3. Cut a deep pocket into each chicken breast and stuff with the rice mixture.

  4. Heat vegetable oil in a skillet over medium-high heat. Sear the stuffed chicken breasts until browned on all sides.

  5. Transfer the chicken to the prepared baking dish and bake in the preheated oven for 25-30 minutes or until cooked through.

  6. While the chicken is cooking, prepare the hot peanut & tomato sauce. In a saucepan, combine peanut butter, diced tomatoes, chicken broth, tomato paste, hot sauce, and salt. Simmer for 10 minutes, stirring occasionally.

  7. Serve the stuffed chicken breasts with the hot peanut & tomato sauce on top.
