How To Make Stuffed Baked Courgettes with Garlic & Herb Crumbs & Pine Nuts

Ingredients
- 4 medium courgettes
- 2 tbsp olive oil
- 2 cloves of garlic, minced
- 1 cup breadcrumbs
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh basil, chopped
- 1/4 cup grated Parmesan cheese
- 1/4 cup pine nuts
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F).

Slice the courgettes in half lengthwise and scoop out the seeds, creating a hollow in each half.

In a pan, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

Remove the pan from the heat and add the breadcrumbs, parsley, basil, Parmesan cheese, salt, and pepper. Mix well to combine.

Stuff each courgette half with the breadcrumb mixture and place them on a baking sheet lined with parchment paper.

Sprinkle the pine nuts over the top of the stuffed courgettes.

Bake in the preheated oven for 25-30 minutes until the courgettes are tender and the breadcrumbs are golden brown.
