  • 1 and 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tbsp lemon zest
  • 1 tbsp caraway seeds
  • 1 tbsp poppy seeds


  1. Preheat oven to 375F. Line a muffin tin with paper liners.

  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.

  3. In a separate bowl, beat egg, then add milk, vegetable oil, lemon zest, caraway seeds, and poppy seeds.

  4. Pour wet ingredients into dry ingredients and mix until just combined.

  5. Spoon batter into muffin tin, filling each cup about 2/3 full.

  6. Bake for 18-20 minutes, or until a toothpick comes out clean when inserted into the center of a muffin.

  7. Let muffins cool in the pan for 5 minutes before removing them to a wire rack to cool completely.
