Ingredients

  • 1 head of cabbage, chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tbsp of olive oil
  • 1 tsp caraway seeds
  • 4 cups of chicken or vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil and sauté onion and garlic until translucent.

  2. Add chopped cabbage and caraway seeds to the pot and continue to cook until cabbage is wilted.

  3. Pour in broth and bring soup to a boil, then reduce heat and let it simmer for 20-25 minutes, until vegetables are tender.

  4. Use a hand blender to puree the soup or transfer it into a blender and blend until smooth.

  5. Season with salt and pepper to taste and serve hot.
