  • 1 1/2 lbs baby red potatoes, halved
  • 3 cloves garlic, minced

Instructions

  1. Preheat oven to 400°F.

  2. In a bowl, toss potatoes with olive oil and minced garlic. Season with salt and pepper.

  3. Arrange potatoes in a single layer on a baking sheet lined with parchment paper.

  4. Roast for 25-30 minutes or until golden brown and crispy.

  5. Remove from oven and sprinkle with chopped parsley.

  6. Serve hot.
