  • 1 pound fingerling potatoes

Instructions

  1. Preheat oven to 425°F (220°C).

  2. Rinse and dry the fingerling potatoes, then cut them in half lengthwise.

  3. In a large bowl, combine the minced garlic, olive oil, Parmesan cheese, salt, and pepper.

  4. Toss the halved potatoes in the mixture until evenly coated.

  5. Transfer the potatoes to a baking sheet lined with parchment paper, arranging them in a single layer.

  6. Roast in the preheated oven for about 25-30 minutes, or until the potatoes are golden brown and crispy.

  7. Garnish with fresh parsley before serving.
