Ingredients

  • 4 cups broccoli florets
  • 2 tbsp butter
  • 1/2 cup diced onion
  • 2 garlic cloves, minced
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. In a pot, melt butter over medium heat and add onion and garlic. Sauté for 2 minutes.

  2. Add broccoli florets and chicken broth. Let it simmer for 15 minutes until the broccoli is cooked through.

  3. In a blender, blend the soup until smooth and return it back to the pot.

  4. Add heavy cream and shredded cheese. Stir until the cheese is melted.

  5. Season with salt and pepper to taste.
