  • 8 eggs
  • 1/4 cup milk
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp olive oil
  • 1/2 lb asparagus, trimmed and cut into bite-size pieces
  • 2 oz goat cheese, crumbled

Instructions

  1. Preheat broiler.

  2. In a bowl, whisk together eggs, milk, salt, and pepper.

  3. Heat olive oil in a 10-inch oven-safe skillet over medium heat.

  4. Add asparagus and cook until tender, about 5 minutes.

  5. Pour egg mixture into skillet and cook until edges are set, about 5 minutes.

  6. Sprinkle goat cheese over eggs and place under the broiler for 2-3 minutes, until golden brown and set in the center.

  7. Serve hot and enjoy!
