Ingredients

  • 1.5 pounds pork shoulder, cut into chunks
  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 bay leaf
  • 1/2 teaspoon black pepper
  • 1/4 cup water
  • 2 tablespoons cooking oil
  • 2 green onions, sliced (for garnish)
  • Steamed rice, for serving

Instructions

  1. In a large bowl, combine soy sauce, vinegar, brown sugar, garlic, bay leaf, and black pepper. Stir until the sugar is dissolved.

  2. Add the pork chunks to the marinade and let it marinate for at least 30 minutes, or overnight in the refrigerator for more flavor.

  3. Heat oil in a large pot over medium heat. Add the marinated pork, reserving the marinade, and cook until browned on all sides.

  4. Pour in the reserved marinade and water. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the pork is tender.

  5. In a separate pan, heat 1 tablespoon of oil over medium heat. Add the pineapple chunks and cook until caramelised and slightly browned.

  6. Once the pork is tender, add the caramelised pineapple to the pot and simmer for an additional 10 minutes to allow the flavors to meld together.

  7. Serve the Pork & Caramelised Pineapple Adobo over steamed rice. Garnish with sliced green onions.
