How To Make Red Red

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Serves:

Ingredients

  • 1 cup dried black-eyed peas, soaked overnight
  • 2 ripe plantains, sliced
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 2 tomatoes, chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 cup vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Drain and rinse the soaked black-eyed peas. In a large pot, cover the peas with water and bring to a boil. Reduce heat and simmer for about 1 hour or until tender. Drain and set aside.

  2. In a separate pan, heat the vegetable oil over medium heat. Add the sliced plantains and fry until golden brown. Remove from heat and set aside.

  3. In the same pan, add chopped onion and cook until translucent. Add minced garlic and grated ginger and cook for another minute.

  4. Add the chopped tomatoes, tomato paste, paprika, cayenne pepper, cumin, and coriander to the pan. Cook for 5 minutes, stirring occasionally.

  5. Add the cooked black-eyed peas and vegetable broth to the pan. Season with salt and pepper. Cover the pan and simmer for another 30 minutes, allowing the flavors to meld together.

  6. Serve the Red Red in a bowl, topped with the fried plantains. Garnish with fresh cilantro.
