  • 1 pound green beans, trimmed
  • 1 cup white vinegar
  • 1 cup water
  • 2 tablespoons sugar
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon red pepper flakes

Instructions

  1. In a small saucepan, combine vinegar, water, sugar, garlic, salt, and red pepper flakes. Bring to a boil.

  2. Meanwhile, blanch the green beans in boiling water for 2 minutes. Drain and rinse with cold water to stop the cooking process.

  3. Place the blanched green beans in a jar or container with a tight-fitting lid.

  4. Pour the hot pickling liquid over the green beans, making sure they are fully submerged. Let cool to room temperature.

  5. Once cooled, cover the jar and refrigerate for at least 4 hours or overnight to allow the flavors to develop.

  6. Serve the pickled green beans as a tasty appetizer or as a crunchy addition to salads and sandwiches.
