How To Make Hasselback Roast Potatoes

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients

  • 4 large potatoes
  • 3 tbsp olive oil
  • 2 cloves of garlic, minced
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Slice each potato into thin slices, stopping before you cut all the way through.

  3. In a small bowl, mix together the olive oil, minced garlic, dried thyme, salt, and black pepper.

  4. Place the potatoes on a baking sheet and brush them with the olive oil mixture, making sure to get in between the slices.

  5. Bake the potatoes for 45-50 minutes, or until they are golden brown and crispy.

  6. Sprinkle the grated Parmesan cheese over the potatoes and return them to the oven for an additional 5 minutes, or until the cheese is melted and bubbling.

  7. Remove from the oven and garnish with fresh chopped parsley.

  8. Serve hot and enjoy!
