How To Make Hasselback Roast Potatoes

Ingredients
- 4 large potatoes
- 3 tbsp olive oil
- 2 cloves of garlic, minced
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
- ¼ cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 425°F (220°C).

Slice each potato into thin slices, stopping before you cut all the way through.

In a small bowl, mix together the olive oil, minced garlic, dried thyme, salt, and black pepper.

Place the potatoes on a baking sheet and brush them with the olive oil mixture, making sure to get in between the slices.

Bake the potatoes for 45-50 minutes, or until they are golden brown and crispy.

Sprinkle the grated Parmesan cheese over the potatoes and return them to the oven for an additional 5 minutes, or until the cheese is melted and bubbling.

Remove from the oven and garnish with fresh chopped parsley.
