How To Make Noodle Salad with Sesame Dressing

Ingredients
- 8 oz of noodles (any variety)
- 1 cup of shredded carrots
- 1 cup of cucumber, thinly sliced
- 1/2 cup of red bell pepper, thinly sliced
- 1/4 cup of chopped green onions
- 1/4 cup of chopped cilantro
- 1/4 cup of sesame seeds
- 1/4 cup of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of sesame oil
- 1 tablespoon of honey
- 1 teaspoon of grated ginger
- 1 clove of garlic, minced
- Salt and pepper to taste
Instructions

Cook the noodles according to package instructions. Drain and rinse with cold water to stop the cooking process. Set aside.

In a large bowl, combine the shredded carrots, cucumber, red bell pepper, green onions, and cilantro.

In a small skillet, toast the sesame seeds over medium heat until golden brown. Set aside.

In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated ginger, minced garlic, salt, and pepper to make the dressing.

Pour the dressing over the vegetable mixture and toss to coat.

Add the cooked noodles to the bowl and gently mix everything together.

Sprinkle the toasted sesame seeds over the salad.
