How To Make Beef Noodle Salad with Stem Ginger Dressing

Ingredients
- 8 oz beef tenderloin, thinly sliced
- 6 oz dried rice noodles
- 1 cup mixed salad greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup sliced cucumber
- 1/4 cup thinly sliced red onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped roasted peanuts
- For the marinade:
- 2 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tbsp grated ginger
- 1 tbsp sesame oil
- For the stem ginger dressing:
- 2 tbsp stem ginger syrup
- 2 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp honey
Instructions

In a bowl, combine the beef with the marinade ingredients. Let it marinate for 10 minutes.

Cook the rice noodles according to the package instructions. Drain and rinse with cold water.

In a large serving bowl, arrange the salad greens, cherry tomatoes, cucumber, red onion, and cilantro.

Heat a skillet over medium-high heat and cook the marinated beef for 2-3 minutes until cooked through. Remove from heat.

In a small bowl, whisk together the stem ginger syrup, rice vinegar, soy sauce, sesame oil, and honey to make the dressing.

Add the cooked beef and rice noodles to the serving bowl with the salad ingredients. Pour the dressing over the top and toss gently to combine.

Sprinkle with chopped roasted peanuts before serving.
