How To Make Chicken Noodle Salad

Ingredients
- 8 oz cooked chicken breast, shredded
- 6 oz rice noodles
- 1 cup shredded carrots
- 1 cup sliced cucumber
- 1/2 cup sliced bell peppers
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- 1/4 cup chopped peanuts
- dressing ingredients:
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp honey
- 1 tsp grated ginger
- 1 clove garlic, minced
Instructions

Cook the rice noodles according to package instructions, then rinse with cold water and set aside.

In a large bowl, combine the cooked chicken, shredded carrots, cucumber, bell peppers, cilantro, green onions, and peanuts.

In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic to make the dressing.

Pour the dressing over the chicken and vegetable mixture and toss well to coat.

Add the cooked rice noodles to the salad and gently toss to combine.

Serve immediately or refrigerate until ready to serve.
