How To Make Lemony Rice & Peas

Ingredients
- 2 cups cooked rice
- 1 cup frozen peas, thawed
- 1 lemon, zest and juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, for garnish
Instructions

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

Add the cooked rice to the skillet and stir to coat it in the garlic-infused oil.

Stir in the thawed peas and cook for an additional 2-3 minutes, until the peas are heated through.

Add the lemon zest and juice to the skillet, along with the salt and black pepper. Stir well to combine all the flavors.

Remove from heat and garnish with fresh parsley.
