Ingredients

  • 1 cup hazelnuts
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a food processor, pulse the hazelnuts until finely ground.

  3. In a medium bowl, combine the ground hazelnuts, flour, sugar, melted butter, vanilla extract, and salt. Mix until a dough forms.

  4. Divide the dough into 4 equal parts and roll each part into a log, about 1 inch thick.

  5. Place the logs onto the prepared baking sheet, leaving space between each log.

  6. Bake for 12 minutes or until lightly golden around the edges.

  7. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
