How To Make Easy Green Vegetable Soup

Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 2 cups chopped green vegetables (such as spinach, kale, broccoli, or peas)
- 1 cup chopped zucchini
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions

Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent.

Add the vegetable broth, chopped green vegetables, chopped zucchini, dried thyme, salt, and pepper to the pot. Stir well to combine.

Bring the soup to a boil, then reduce the heat to low and simmer for 20 minutes, or until the vegetables are tender.

Use an immersion blender or a regular blender to puree the soup until smooth and creamy.
