Ingredients

  • 1 lb green beans, trimmed and cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, peeled and diced
  • 4 cups vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until fragrant and translucent.

  2. Add the carrot and green beans to the pot, and cook for 5 minutes, stirring occasionally.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes or until the beans are tender.

  4. Add the dried oregano and thyme to the pot, and season with salt and pepper according to taste.

  5. Using an immersion blender or a regular blender, blend the soup until smooth and creamy.

  6. Serve hot and enjoy!
