How To Make Courgette Griddle Cakes

- 2 medium courgettes, grated
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup flour
- 1/4 cup grated Parmesan cheese
- 2 eggs, beaten
- 2 tbsp vegetable oil
Instructions

Place the grated courgettes in a colander and sprinkle with salt. Let them sit for 10 minutes to remove excess moisture. Squeeze out any remaining liquid and transfer the courgettes to a clean kitchen towel.

In a large bowl, combine the grated courgettes, salt, black pepper, flour, Parmesan cheese, and beaten eggs. Mix well until all the ingredients are evenly combined.

Heat the vegetable oil in a griddle pan or non-stick skillet over medium heat.

Drop spoonfuls of the courgette mixture onto the griddle, flattening them slightly with the back of the spoon. Cook for 3-4 minutes on each side, until golden brown and cooked through.
