  • 2 medium courgettes, grated
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup flour
  • 1/4 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 2 tbsp vegetable oil

Instructions

  1. Place the grated courgettes in a colander and sprinkle with salt. Let them sit for 10 minutes to remove excess moisture. Squeeze out any remaining liquid and transfer the courgettes to a clean kitchen towel.

  2. In a large bowl, combine the grated courgettes, salt, black pepper, flour, Parmesan cheese, and beaten eggs. Mix well until all the ingredients are evenly combined.

  3. Heat the vegetable oil in a griddle pan or non-stick skillet over medium heat.

  4. Drop spoonfuls of the courgette mixture onto the griddle, flattening them slightly with the back of the spoon. Cook for 3-4 minutes on each side, until golden brown and cooked through.

  5. Remove the griddle cakes from the pan and place them on a plate lined with paper towels to absorb any excess oil.

  6. Serve the Courgette Griddle Cakes warm as an appetizer or as a side dish. They can be enjoyed on their own or with a dipping sauce of your choice.
