Ingredients

  • 8 oz spaghetti
  • 2 cups fresh spinach
  • 1 cup walnuts
  • 2 cloves garlic
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.

  2. In a food processor, combine the spinach, walnuts, garlic, Parmesan cheese, olive oil, salt, and pepper. Process until smooth.

  3. In a large bowl, toss the cooked spaghetti with the spinach and walnut pesto until well coated.

  4. Serve hot and garnish with extra Parmesan cheese, if desired.
