How To Make Griddled Vegetables with Melting Aubergines

- 2 aubergines, sliced
- 1 courgette, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions

Preheat a griddle pan over medium heat.

In a bowl, toss the sliced aubergines, courgette, bell peppers, and onion with olive oil, dried oregano, dried basil, salt, and pepper.

Grill the vegetables on the hot griddle pan for about 8-10 minutes, or until tender and nicely charred, flipping halfway through.
