Ingredients

  • 2 aubergines, sliced
  • 1 courgette, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat a griddle pan over medium heat.

  2. In a bowl, toss the sliced aubergines, courgette, bell peppers, and onion with olive oil, dried oregano, dried basil, salt, and pepper.

  3. Grill the vegetables on the hot griddle pan for about 8-10 minutes, or until tender and nicely charred, flipping halfway through.

  4. Once cooked, transfer the vegetables to a serving platter and serve hot.
