How To Make Courgette fritters with tarragon aïoli

- 2 medium courgettes, grated
- 1 tsp salt
- 1/4 cup all-purpose flour
- 1/4 cup Parmesan cheese, grated
- 1/4 cup fresh parsley, chopped
- 2 green onions, thinly sliced
- 2 cloves garlic, minced
- 2 eggs, beaten
- 3 tbsp vegetable oil
- for the tarragon aïoli:
- 1/2 cup mayonnaise
- 1 tbsp fresh tarragon, chopped
- 1 tbsp lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions

Place the grated courgettes in a colander, sprinkle with salt and let them sit for 10 minutes. Squeeze out the excess moisture using a kitchen towel or paper towels.

In a mixing bowl, combine the grated courgettes, flour, Parmesan cheese, parsley, green onions, garlic, and beaten eggs. Mix well until all the ingredients are evenly combined.

Heat the vegetable oil in a large skillet over medium heat.

Spoon about 2 tablespoons of the courgette mixture into the skillet and flatten it with the back of the spoon to form a fritter. Cook for 2-3 minutes on each side or until golden brown. Repeat with the remaining mixture.

In a separate bowl, mix together the mayonnaise, tarragon, lemon juice, garlic, salt, and pepper to make the tarragon aïoli.
