How To Make Carrot, courgette & orange cakes
Delicious and moist cakes made with carrots, courgettes, and a hint of orange zest.
Serves:
Ingredients
- 2 medium carrots, grated
- 1 courgette, grated
- Zest of 1 orange
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup sugar
- 2 eggs
- 1/4 cup vegetable oil
- 1/4 cup orange juice
- 1/4 cup walnuts, chopped (optional)
Instructions

Preheat the oven to 180°C (350°F) and grease a muffin tin.

In a large bowl, combine the grated carrots, courgette, and orange zest.

In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.

In another bowl, beat the sugar, eggs, vegetable oil, and orange juice until well combined.

Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Fold in the chopped walnuts if desired.

Spoon the batter into the prepared muffin tin and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cakes to cool before removing them from the tin.
