How To Make Vegan Air Fryer Eggplant Parmesan Recipe
Crispy breaded eggplant slices layered with tangy tomato sauce and melty vegan mozzarella cheese.

Ingredients
- 1 large eggplant
- 1 cup plant-based milk
- 1 cup breadcrumbs
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup marinara sauce
- 1 cup vegan mozzarella cheese
Instructions

Slice the eggplant into 1/4 inch rounds.

In a bowl, mix the breadcrumbs, garlic powder, oregano, salt, and black pepper.

Dip the eggplant slices in the plant-based milk and then coat them with the breadcrumb mixture.

Preheat the air fryer to 400°F and spray the basket with cooking spray.

Place the breaded eggplant slices in a single layer in the air fryer basket. Cook for 10 minutes, flip the slices, and cook for another 10 minutes until they are crispy and golden brown.

Remove the eggplant from the air fryer and switch it to broil mode.

On an oven-safe dish, place a layer of the eggplant slices, top with marinara sauce and vegan mozzarella cheese. Repeat the layers until all the eggplant slices are used up.

Broil the eggplant parm for 3-5 minutes until the cheese is melted and bubbly.
